Morning Glory Muffins

This morning we went to a ward breakfast where I signed up to bring muffins. I had never made these before but they ended up being so good, Tyler had at least 5.

MORNING GLORY MUFFINS
SIFT:
2 cups flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
ADD:
1 apple, grated
1 cup carrot, grated
1/2 cup coconut
1/2 cup raisins (optional)
1/2 cup pecans (optional)
BEAT:
3 eggs
ADD:
1/2 cup oil
1/2 cup melted butter
2 teaspoons vanilla

Pour wet ingredients into dry. Quickly combine. Pour into muffin cups or greased muffin pan 2/3 full. Bake at 350 for 20-25 minutes.

Serves:18 Muffins

For Time and All Eternity


We so excited to let everyone know that Tyler and I will be sealed in the Seattle Temple on May 2nd for time and all eternity. I feel bad it’s taken us so long to do this but so glad and more then happy we are. The timing seems to be working out perfect. I was very stressed that Tyler’s work schedule would never workout and that some of my family members wouldn’t be able to make it but that’s not the case. We are so thankful to be members of the church of Jesus Christ of later day saints.

Dog Park Fun

We just recently found out there is a dog park near our house. So we've been taking Lola there every chance we get. We love to take her just as much as she loves to go.
Even though Lola spends most of her time snifing the fence, she has been getting better at being more active with the other dogs the more we go. You can tell by this picture how much she loves the dog park. One of my favorite things in the whole world is when a dog smiles. I think its so cute!

Going to the Temple



Tyler and I are so excited that we're finally going to the temple. The day is Thursday April 2nd - 6:00PM session. We are only doing one part that night. We will keep you updated on our sealing date. We're hoping it will be within the next couple weeks. I'm just waiting to hear when Tyler's schedule changes so we can do it on a Saturday and have whoever wants to come by my parents house after for food and visiting.

Washington Apple Bread with Streusel Topping


Apple Bread
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup sugar
2 large eggs
1 Tablespoon lemon juice
2 teaspoons vanilla extract
2 Granny Smith apples (or apple of your choice), peeled and chopped
Streusel Topping
2 Tablespoons flour
2 Tablespoons granulated sugar
1 teaspoon cinnamon
1 Tablespoon butter
2 Tablespoons brown sugar
1. Preheat over to 350F
2. To prepare the topping, combine flour, granulated sugar and cinnamon in a small bowl. Cut in butter until crumbly. Set aside.
3. To prepare the bread, combine flour, baking soda and salt in a medium bowl.
4. Cream butter and sugar in a mixing bowl. Beat in eggs, lemon juice and vanilla.
5. Add the flour mixture to the butter mixture and stir just until moistened.
Add apples and stir gently to combine.
6. Spoon half of the batter into a buttered 9-by-5-inch loaf pan. Sprinkle with half of the topping. Spoon remaining batter into the pan and sprinkle with the remaining topping. Finish by sprinkling evenly with brown sugar.
7. Bake for 55-60 minutes, or until a wooden pick inserted in the center comes out clean. Remove the bread from the pan and set on a rack to cool.
Makes 10 servings.

Happy 25th Birthday Tyler

We were in Vegas on Tyler's Birthday so that morning he went golfing at Desert Pines golf course. He had a great time. We stopped by the course the night before and it was absolultly beautiful! I have to say he had a great birthday we had family dinner with my family before we left. His parents sent him such a nice gift. When we got back his godfather and mother took us out to dinner, and a family in our ward made him a cake and came over to sing happy birthday to him. Spoiled boy!

Vegas Vacation

Tyler and I had a great time in Vegas for the week. It was so nice to get away and enjoy the time together.

Of course something always happens to me when I go on vacation. It's just a givin and I hate it! The first day we were in Vegas we walked the whole strip going in just about every hotel. Later that afternoon my foot cramped up and never stopped hurting. We didnt even get to go out of the hotel room the first night because I could barely walk. It sucked!!! My whole trip I was in pain. Why does this always happen to me!?!
The best part of the trip was in-in-out burger! Tyler could of eatin there everyday if we had the chance too.
We stayed at the Luxor . I kind of wish we would of gone to see Chris Angel but we heard tickets were all sold out.
It was so windy at night we didnt get to see the Treasure Island show but we still had a great time walkin the strip.
The best part of the trip for me is when we were downtown Vegas and a couple of the Chippendale dancers were out taking pictures with people. They wouldn't let you take pictures with your own cameras but Tyler was able to sneak this one. To bad we didnt figure out how to use the camera at night until our last night there!
I didnt get a copy of the picture they took professionally because they were so expensive it wasnt worth it. But I'll always have this bad dark picture to remember it by. =0)
